- Ponemos la calabaza a cocinar al horno yo le pongo tomillo y sal y un chorro de aceite las cocino enteras o sea partidas al medio y con cáscara, pero si quieren cocción rápida cortan en rodajas aproximadamente 40 minutos o hasta que esté bien cocidas, también pueden hacerlas hervidas retirar del horno y hacer puré, reservar.
- Para la masa ponemos en un bols la harina ahuecamos y en el centro agregamos sal y pimienta a gusto, los 5 huevos y 1 cucharada de aceite de oliva, mezclamos poco a poco hasta que se integre todo debe quedar una masa uniforme amasamos unos 7 a 10 minutos aproximadamente o hasta que la masa quede lisa y uniforme, dejamos descansar por 30 minutos tapado con un paño limpio.
- Pasado este tiempo amasamos 2 minutos siempre enharinamos la mesada
a donde vamos a masar estiramos con un palote y vamos armando los sorrentinos un poco de puré de calabaza un poco de queso muzarella tapamos con el puré devuelta.( si no puede rallar el queso y mezclar directamente con el puré de calabazas, Si no tiene moldes de sorrentinos, puedes hacerlos directamente estirando la masa sobre la mesa e ir cortando con un cortapasta redondo o un cuchillo, cerrando los bordes - Ponemos agua en un cacerola cuando rompa el hervor agregar sal y cocinar los sorrentinos 3 a 5 minutos, mientras vamos preparando la salsa, cortar bien chiquito la cebolla sofreír con 1 cucharada de aceite, inmediatamente agregamos la crema de leche a fuego lento, dejar cocinar por 5 minutos salpimentar a gusto apagar el fuego y agregar las cebollas de verdeo cortadas, Servimos y a disfrutar la pasta casera!!
- TIPS: del mismo relleno hice distintos tipos de pasta para frezzar fagottini, tortelini, agnolotti, sorrentinos y si queda masa se pueden hacer fideos, no se despedicia nada!!
