  1. Cortas una calabaza grande por la mitad, salpimentar y la horneas 45' a 220°C.
  2. Una vez horneada, ahuecas la calabaza con una cuchara y reservas como parte del relleno.
  3. En un sartén salteas los puerros, cebolla, pimientos y champiñones. Salpimentamos y yo además le pongo una cda de cúrcuma, mix de pimientas y pimentón ahumado picante.
  4. A esto le agregamos la 1/2 lata de choclo cremoso, el puré de calabaza que sacamos al ahuecarla, y la soja texturizada previamente hidratada.
  5. Rellenamos cada mitad de la calabaza, y gratinamos 10' con queso muzzarella, cremoso o alguno en hebras.
